What truffle does to a burger
Truffle is an aroma before it is a flavour. It reads as earthy and faintly garlicky, and it works on beef because beef is savoury enough to stand under it. Put truffle on something delicate and the truffle wins; put it on a griddled patty and the two meet in the middle.
Almost every truffle burger you will be served uses truffle aioli rather than shaved truffle. That is not a shortcut. An aioli spreads the aroma evenly and survives the heat of the patty, which shaved truffle does not.
What else is in the build
- House-ground beef — ground in house, so the fat content is controlled rather than inherited.
- Jack cheese — mild and clean-melting, so it does not fight the truffle.
- Crispy caramelised onions — sweetness and crunch, which a soft burger needs.
