The practical difference between a burger and a chicken sandwich is fat and therefore richness: a beef patty carries its own fat through the whole sandwich, while chicken breast is lean and relies on the coating, the sauce or the brine for moisture. Choose a burger when you want something rich and savoury that fills you up, and a fried chicken sandwich when you want texture and heat — a crisp coating gives contrast a burger does not have.
Fat is the real difference
A beef patty renders as it cooks and bastes itself. Chicken breast has almost no fat, which is why a good chicken sandwich is either brined, buttermilk-marinated, fried in a coating, or all three. A dry chicken sandwich is a chicken sandwich that skipped those steps.
Texture
This is where fried chicken wins. A properly fried craggy coating gives a crunch that a burger cannot produce, and it holds sauce in a way a smooth patty does not.
Heat
Chicken takes spice better. Beef fights it, because the richness and the heat compete. That is why the hot-honey and harissa builds tend to sit on the chicken side of a board.
